Most commercial eomuk relies on mixed white fish and binding fillers. We don't. Project 001 is built on a single-source fish promise — 100% wild-caught Alaskan pollock — and a refusal to shortcut the traditional techniques that hands used to do.
The result isn't louder, it's truer: a cleaner fish flavor, a more resilient bite, and a fishcake that tastes like it was made by someone, not something.

Pollock paste is blended in small batches with potato starch, green onion, carrot, and a precise salt ratio (1.8%) — the threshold at which myofibrillar proteins gel into eomuk's signature bounce.
Each cake is hand-formed in small batches. No extrusion, no machine moulding — texture is a tactile decision.
Canola oil, held at 175 °C ± 2°. Below this, the surface is pale; above, the protein toughens. The window is narrow on purpose.
